Bake
Serves 8-10
Ingredients:
1½ pounds onions, finely diced
1 clove garlic, minced
2 Tbs extra-virgin olive oil
1 Tbs flour
2 eggs, lightly beaten
¼ cup heavy cream
1½ Tbs fresh thyme leaves
2 Tbs fresh parsley, chopped
1 unbaked 9-inch pastry shell
Preparation:
Preheat oven to 350°.
Sauté onions and garlic in oil over medium heat for 30 minutes, stirring often, until onions are soft and golden. Sprinkle with flour. Stir and cook two minutes. Remove from heat.
Stir in eggs, cream and herbs. Pour into pastry shell. Bake at 350° for 40-45 minutes, until filling is set and golden brown. Cut into wedges.
