Ingredients:
1½ lbs lean boneless sirloin
½ cup fresh orange juice
1 clove garlic, minced
3 Tbs extra-virgin olive oil
2 Tbs fresh thyme leaves, minced
2 medium thin-skinned oranges, unpeeled
fresh thyme sprigs, tied into a bundle, for use as basting brush
Preparation:
Slice steak diagonally across grain into 1 x ¼ inch strips.
Combine juice, garlic, oil and minced thyme. Pour over meat and marinate 30 minutes.
Slice oranges crosswise into ½ inch slices; cut each slice into eight wedges.
Weave steak onto skewers accordion-style, placing an orange wedge between each loop.
Grill over medium-hot coals for 10 minutes, turning and basting with marinade until beef reaches desired doneness. Serve hot.
Discard thyme basting brush.
